Hi there, everyone!! I hope you guys had a great week and are ready for the weekend. Our vacation is coming to an end, but we leave for another vacation in about a week! We are loving summer! My hubs is making up for it with a lot of late nights at work.
Yesterday was a great day!! It started with water skiing followed by kayaking, then sunbathing in a raft on the water. It was also our cabins turn to cook dinner, and boy was it good…and healthy! Win! We made chicken kabobs, brown rice, sweet potato fries, and a greek yogurt lemon and garlic aioli.
Veggie prep! We used mushrooms, 3 different peppers, and onions.
Next, we pan cooked the chicken just a little, then my husband and I made up 38 kabobs before sending them to the grill.
